VEGAN EGGNOG

PREPARATION

  • The cashew nuts are the basis for this creamy and delicious cocktail, which can be enjoyed with or without alcohol.

  • 1. Soak the cashew nuts in 500ml water for at least 4 hours or up to two days. The longer you soak the kernels, the creamier the eggnog will be.

  • 2. Pour the cashews over a sieve and rinse them briefly with clear water.

  • 3. Mix the nuts with the remaining ingredients in a blender until you get a smooth, creamy mass.

  • 4. Add alcohol - if desired. Serve immediately in a cocktail glass.

INGREDIENTS

  • 175 g cashew nuts

  • 500ml of water

  • 6-7 dates

  • ¼ tsp salt

  • ½ tsp nutmeg, freshly ground

  • ¼ tsp cinnamon

  • 80 ml maple syrup

  • 1 tsp vanilla sugar

  • 400 ml water, very cold

  • For a alcohol version add 125ml of one of the following, optional:

  • rum

  • bourbon

  • whiskey

  • brandy
