CHOCOLATE WAFFLES WITH CHOCOLATE CHIPS

PREPARATION

I love waffles and these taste amazing! Simply sprinkle with some powdered sugar or serve with cherry compote and enjoy.

1. In a large bowl, combine flour, cocoa, sugar, baking powder, soda, and salt. Melt the chocolate in a water bath, for example. Make sure it doesn't get too hot. In the mixing bowl, whisk together the egg yolks, buttermilk, vanilla, vegetable oil, and melted chocolate. Then add this liquid to the flour mixture and stir gently to combine everything.

2. Before whipping the egg whites until stiff: Wipe out the bowl with the vinegar and salt and also rub the whisk with the mixture. Do not rinse with water! Now beat the egg whites until stiff. Add a tablespoon of sugar. Fold the beaten egg whites into the batter, then the chocolate chips.

3. Preheat the waffle-iron  and set the timer for 4 minutes. Put the batter in portions on the waffle iron and bake the chocolate waffles. Sprinkle with powdered sugar before serving.

This recipe was prepared using a einer KitchenAid Artisan Stand Mixer 6.9L with whisk, a heated mixing bowl with precise temperature control and an Artisan waffle iron zu.

For the dough

  • 100 g dark chocolate, melted

  • 310 grams of flour

  • 60 g cocoa, unsweetened

  • 45 g raw cane sugar (muscovy)

  • 2 ½ tsp baking powder

  • 1 ¼ tsp baking soda (baking soda)

  • 1 tsp salt

  • 3 eggs, separated

  • 500ml buttermilk

  • 1 tsp vanilla extract

  • 125 ml vegetable oil

  • 100 g dark chocolate, roughly chopped

  • 1 tsp vinegar

  • ¼ tsp salt

  • 1 tbsp sugar for the egg whites

  • 30 g icing sugar for dusting or cherry compote
