STRAWBERRY SOUP WITH FRESH PINEAPPLE AND COCONUT MILK

PREPARATION

  • STRAWBERRY SOUP - A FRUITY SURPRISE

  • This soup is fabulous! The pink color says "strawberry" but that's deceptive. As soon as you taste, you perceive the complex aromas. A powerful blender, for example the Kitchen Aid Partisan Blender, supports for a velvety result. A dessert everyone loves!

  • Preparation:
  • Prepare the fruit as described in the list of ingredients and add to the blender along with the orange juice, coconut milk and sugar. Blend on high for about 20 seconds until well combined. Then refrigerate for a few hours so that the flavors can unite and develop.

  • Garnish: Finely chop the herbs and add to the yoghurt. Mix well.

  • Enjoy the soup nice and cold with a dab of yoghurt and sliced strawberries.

INGREDIENTS

  • For the sauce:
  • 500 g strawberries, hulled

  • ¼ ripe pineapple, peeled, cored and roughly chopped

  • 200 ml coconut milk

  • juice of 2 oranges

  • 3 tbsp sugar

  • Set:
  • Fresh basil

  • fresh mint

  • 200 g Greek yoghurt, 10% fat

  • a bunch of fresh strawberries
