CHOCOLATE CHIP COOKIES

At any time of the year and always - I love cookies! Baking cookies only at Christmas - unimaginable for Americans. Cookies are part of everyday life, almost like water and bread. And for me, the Chocolate Chip Cookie is the ultimate cookie.

PREPARATION

1. Combine starch, flour, baking soda, baking powder and salt in a bowl. Put aside.

2. Using a food processor or hand mixer, cream together the butter and both sugars for a few minutes until very creamy. Add the eggs one by one. Stir in vanilla extract. Reduce speed and add flour, baking soda, baking powder and salt mixture. Mix just until the dough comes together (5 to 10 seconds). Add the chocolate chips and mix in with a wooden spoon or spatula. Cover the dough with cling film and place in the fridge for at least 2 hours. When the dough is cool, it is easier to work with. The dough will keep fresh in the fridge for up to a week. So you can bake the cookies little by little!

3. To bake, preheat the oven to 180°C. Line a baking sheet with parchment paper and set aside.

4. Using a tablespoon, ice cream scoop or just by hand, place the batter onto the baking sheet, making sure all the cookies are the same size! Bake until golden brown. Depending on the size of the cookies, this takes about 10 to 13 minutes. Set the baking sheet on a metal wire rack to cool for 10 minutes.

INFORMATION

For 40 cookies, each 10 cm in diameter

INGREDIENTS

  • 100 grams of starch

  • 300 grams of flour

  • 1 tsp baking soda

  • 1 teaspoon Baking powder

  • 1 tsp salt

  • 250g softened butter

  • 200 g whole cane sugar (I prefer to use Muscovado)

  • 200 grams of sugar

  • 2 eggs

  • 2 tsp vanilla extract

  • 400 to 600 g dark chocolate, roughly chopped
