BUTTERMILK ROLLS

PREPARATION

  • BUTTERFUL BUN WITH CHEESE AND HERBS

  • When time is short, these buns are your lifesaver. In less than 20 minutes you have a perfect accompaniment to a soup or a salad.

    Just open your fridge and combine whatever cheese or fresh herbs you have on hand. It's that easy!

  • Preheat the Twelix oven to 220° on the normal/convection setting. Place the rack on rail 2. Cover a baking tray with baking paper.

  • Combine flour, starch, baking powder, salt and sugar in bowl of KitchenAid Artisan Stand Mixer. In a separate small bowl, mix together the fresh herbs, chopped green onion, and shredded cheese.

  • Now add the cold butter to the flour mixture and mix with the flat beater attachment on low speed until the butter pieces are just pea-sized. With the machine running, then add the buttermilk and the herb, cheese and onion mixture. Stir just until everything is just mixed together.

  • Then put the dough on a lightly floured work surface and knead it together briefly. The secret to fluffy and flaky buns is to use cold butter and not over-knead the dough. Roll out the dough to a thickness of about 2 cm and cut out the buns with a cookie cutter or a glass.

  • They are baked in the oven for 10 to 12 minutes until golden. Enjoy your meal!

INFORMATION

For 8 to 10 rolls, depending on size

INGREDIENTS

  • 200 grams of flour

  • 80 g corn or potato starch

  • ½ tsp baking powder

  • ½ tsp salt

  • 1 tablespoon of sugar

  • 1 teaspoon fresh herbs of your choice

  • 1 spring onion, finely chopped

  • 60 g cheese, finely grated (I prefer cheddar or parmesan)

  • 125 g butter, cold and finely diced

  • 160 ml buttermilk
