COOKIE CHIPS CUTS WITH FRUITY FILLING

PREPARATION

MY CREATION FOR THE NEW BAHLSEN COOKIE CHIPS

  1. Oven at 180°C. preheat. Lightly butter a 23 x 23 cm or 25 cm diameter baking pan. Mix the finely ground Bahlsen Cookie Chips, rolled oats, flour, sugar and salt. Roughly work in the cold butter and distribute the mixture in the baking pan. Using a piece of cling film, press the mixture evenly into the baking pan and bake for 15 to 17 minutes - until the bottom is golden brown. Let cool on a wire rack for about 30 minutes before pouring the cream mixture on top.

  2. Using a hand mixer or whisk, cream together the butter, cream and powdered sugar until smooth. Mix in the jam thoroughly with a spatula. Spread on the chilled floor. Place in the fridge for about an hour.

  3. Place the finely chopped chocolate in a bowl. Boil the cream and pour over the chocolate. Stir vigorously with a whisk until the chocolate has melted and the ganache is spreadable. Spread over the chilled filling with a knife. Now spread the Bahlsen cookies on top and press lightly into the ganache. Chill in the fridge for about 30 minutes before slicing.

INGREDIENTS

GROUND

1 pack Bahlsen Cookie Chips Chocolate Chip, minus 25 whole cookies for decoration. Finely grind the rest, about 55 g

  • 100 g oat flakes, pithy
    150 grams of flour
    25 grams of sugar
    ¼ tsp salt
    190 g butter, cold

FILLING

60 g soft butter
2 tbsp cream
200 g powdered sugar, sifted
2-3 tbsp cherry or strawberry jam

GANACHE

  • 50 grams of cream
    100 g dark chocolate, very finely chopped
